Cookies!



Don’t you just LOVE cookies! Cinnamon cookies, chocolate chip cookies, cocos cookies, you name it! On first Easter day I wanted to bake cookies, but the supermarket was closed. Then a search began for a very basic recipe, and I found one! For these cookies you only need 5 ingredients.



What do you need: 

For the cookies:
  • 125 gram unsalted butter
  • 125 gram sugar
  • 200 gram flour or self-raising flour
  • Package vanilla sugar
  • 1 tbsp water
  • When using flour, 1 tsp baking powder


Making the cookies:

  1. Melt the butter on 850 watt in the microwave during one minute.
  2. Put all the ingredients in a bowl and mix these together with dough hooks to a crumbly dough.
  3. Form balls of about 1.5 cm in diameter and put these on a baking tray with baking paper. You don't have to push the balls flat, in the oven they will sag on their own.  
  4. Put them in the middle of a preheated oven at 200 degrees Celsius during 12 minutes. I had the idea they weren't ready yet, but they were! They look very soft, but when they cool down they'll be crunchy on the outside and soft on the inside. Scrumptious!



As you can see above, I've got 23.5 cookies out of this mix! Well, 24. You've got to taste them right!?

What I love about this recipe is that you can make these cookies as wild as you can imagine. Those lovely cinnamon cookies, chocolate cookies or cocos cookies from above, are made like that with this recipe. I added some cinnamon spices to the dough and I had some lovely cinnamon cookies. Try small pieces of chocolate for chocolate chip cookies, grated cocos for cocos cookies or maybe even berries?
Also you can vary with the kind of sugar you use. Think about cane sugar, brown sugar or regular sugar. For my cookies I used cane sugar, loved it!
